Recipe for heather honey cake
Exmoor National Park

Bees feeding on heather moors produce a distinctive tasting honey
Ingredients:
- 6 oz Exmoor heather honey
- 5 oz butter
- 3 oz soft brown sugar
- 1 egg
- 7 oz self raising flour
- 1 teaspoon baking powder
- 1 tablespoon water
And for the glaze:
- 1 tablespoon heather honey
- 2 tablespoons water
- 2½ oz icing sugar
How to make it:
Gently heat the honey, sugar, butter and water in a pan over a low heat until melted. Beat in the egg, followed by the flour, sieved in with the baking powder. Bake in a greased and lined 7 inch cake tin at 350F/180C/gas mark 4 for 45 minutes. Leave to cool in the tin before turning out.
Warm together the honey, water and icing sugar and brush over the cake to glaze.
Best eaten with a big pot of tea and shared with friends.
