Bog myrtle or gale plant

Bog-myrtle or gale is a sweet smelling herb that thrives in higher altitudes on moors, in bogs and along rivers

How to make it:

Put the gale, sugar and lemon in a sterilised bucket. Pour on the boiling water. Allow to cool. When the mixture is tepid, float the slice of toast on the surface with the yeast spread on it. Leave for 24 hours. Then remove the toast, strain and bottle in corked bottles. Mind out for popping corks!

Really refreshing on a sunny summers afternoon after a long walk.
