Recipe for Pembrokeshire Faggots / Ffagots Sir Benfro
Pembrokeshire Coast National Park

This savoury dish was popular after pig-killing, in Pembrokeshire, over 100 years ago.
Ingredients:
- 700g (1½ lb) pigs liver
- 110g (4 oz) breadcrumbs
- 75g (3 oz) suet
- 2 large onions
- 1 - 2 tsp sage (chopped)
- 2 tsp salt
- ¼ tsp pepper
How to make it:
Mince raw liver and onions into a bowl. Mix with bread crumbs, suet, salt, pepper and sage thoroughly, then form into small balls. Bake in a moderate oven (190ºC ) for about 30 minutes.
Pour boiling water into the tin around the foggots to form the gravy.
Tastes great with fresh sage grown on your windowsill.
